What is Chablis?

Chablis is located in central-eastern France, north of Burgundy, in the heart of the Serein valley. There are about 5,700 hectares of vines planted. Chablis represents around 20 % of the volume of wine produced in Burgundy. Chablis is both the name of a town and the name of an appellation.

The climate is cool continental. Main risks associated with viticulture there are spring frosts, hail storms and fungal diseases. The soils are made of limestone and clay and rich in fossilised shells (kimmeridgian subsoil).

Only Chardonnay is allowed for the Chablis appellation, giving dry and mineral white wines. The maximum yield is 60 hl/ha.

34 million bottles of Chablis were sold in 2019, 2/3 of which were exported. The United Kingdom is the leading export market.
