Pic Saint-Loup AOP
Located in the Languedoc, just north of Montpellier, this appellation is famous for its stunning limestone cliffs, including the iconic Pic Saint-Loup.
Climate
The region enjoys a Mediterranean climate, but the nearby Cévennes mountains moderate its influence, increasing the day-to-night temperature range to preserve freshness in the grapes. Cold, dry winds like the Mistral and Tramontane help dry the vines after rain and keep them fresh during warm summers. At the same time, the hills protect the vines from strong winds that could cause damage.
Soils
The soils here are a blend of hard and soft limestones, marl, and alluvial deposits, providing an excellent balance of water retention and drainage. This combination allows for the production of wines with both concentration and structure.
Grape varieties
Syrah is the dominant grape, required to make up at least 50% of red wines and 30% of rosés. It is typically blended with grenache, which adds body, and mourvèdre, which contributes structure, colour, and spice. Yields are usually low, around 35 hl/ha.
Wines
The majority of wines (90%) are red, known for their intense aromas of black fruits, spices, and garrigue herbs. These wines are fresh, elegant, and have excellent ageing potential.
